Stainless steel is the pan most home cooks own and least often use, because their first attempt welded a piece of chicken to it. The technique that prevents that is specific and learnable in one session.
Why It Sticks
Steel looks smooth and is microscopically full of pores and irregularities. Cold protein settles into them and bonds chemically as it heats.
Heating the pan first causes the metal to expand, which closes those irregularities. Adding oil then fills what remains, creating a temporary barrier.
Cold pan, cold oil, cold food is the sequence that guarantees sticking.
What Stainless Is For
The jobs nonstick cannot do: hard searing, a proper crust, and anything finished under a grill or in a hot oven.

The Water Test

Then add the oil, let it shimmer, then add the food.
The Rest of the Technique
- Pat food dry, since surface moisture prevents browning
- Bring meat closer to room temperature rather than straight from the fridge

- It releases itself when the crust has formed

The Fond Is the Point

Discolouration Is Not Damage

Burnt-On Food

Stainless tolerates treatment that would destroy a coating, which is much of its appeal.
It Lasts Indefinitely
Properly made stainless outlives the cook. That is the argument for buying one good pan rather than replacing coated ones.
